Memorial Day Menu Ideas

Forget the 24 hour news, social media and streaming movies, 24 hours of online recipes is the best thing the internet brought us.    I look for easy recipes for which I have all or most of the ingredients.  I don't sweat not having all the ingredients, and I substitute for or delete ingredients I don't like (like jalapeno peppers). With the internet, it's so simple to find out what you can use to substitute for an ingredient you don't have. I just found a What to Substitute for Any Kind of Vinegar resource. 

This  Spicy Beef and Cucumbers recipe is super simple, and while I'd usually substitute my favorite apple cider vinegar (ACV) for the black vinegar (which I don't have) the Chocolate Balsamic Vinegar that I got at the farmers market was calling to be used.  

Grilled Chicken with Spicy Cucumbers looks like another easy dish. I'll leave out the jalapenos, but I'm hoping to get to Brandon Family Farm at the market early tomorrow because I definitely want to add their fresh radishes to it. And Julia Baffoni's chicken of course.  

 And because Bill and I have a fondness for breakfast-for-dinner (Bill does not believe that "brinner"is a word but we all know it is), here's a Sausage & Tomato Frittata, as well as the answer to the question that everyone asks at least once in their life, is it a Frittata, Quiche or Omellette?  

And those of you who know me know I'm always grateful when you share YOUR recipes (and you'll always get the credit for it)!
