Sausage, Tomatoes & Greens over Rice

1lb Browning Homestead Sweet Italian Sausage, sliced into ¾” pieces

2 medium shallots, chopped  

6-7 fresh, juicy tomatoes, chopped (or a 28oz can of petite diced tomatoes in juice)

8 – 16oz fresh spinach, spinach arugula mix, Swiss chard or other fresh leafy greens

2 tbsp. extra virgin olive oil

Jasmati Rice or your favorite rice

Large sauté pan with cover  

 

Prepare your shallots, tomatoes and sausage for cooking.

Start your rice cooking.

Heat EVOO in large sauté pan over medium high heat.  Add shallots and sausage, reduce heat to medium and stir to brown sausage and keep shallots from catching.  When shallots are almost clear, stir in tomatoes, cover and turn to low heat.

[NOTE:  As you can see my fresh tomatoes were not at all juicy, so I added the can of the diced tomatoes with juice, pictured below.]

Simmer mixture on low for 10 minutes, stirring occasionally. 

Add fresh greens on top. I only had a 5 oz bag of spinach-arugula mix as shown here but I prefer to use 16 oz.  A full 16 oz of greens provide more delicious greens to pick up the sausage flavors and stretches the servings of this recipe. Don't be afraid to experiment with greens in this kind of cooking.  

Replace cover and simmer on low for 5 – 10 minutes, stirring in greens as they become soft.

If you think there’s too much liquid, simmer for another 4-5 minutes with the pan cover removed which will cook off some of the liquid, stirring occasionally to prevent catching.  but remember you're serving over rice and the liquid is flavorful and delicious with that rice. 

Serve over rice.    

Serves 6.
